Kimchi & Luncheon Meat Fried Rice

Ingredients:

  • 2 tablespoons canola oil
  • 1 cup CDO Chinese Style luncheon meat, cubed into 1/2-inch cubes
  • 2 tbsps garlic, chopped
  • 1 tsp ginger, grated
  • 1 cup kimchi, roughly chopped, drained
  • 2 cups white rice, cooked
  • 1/4 cup leeks, sliced
  • 1/2 tsp Japanese soy sauce
  • salt and pepper, to taste
  • 2 tsps sesame oil
  • sesame seeds, toasted
  • green onions, chopped, to garnish
  • 2 eggs

How to cook Kimchi and Spam Fried Rice:

  1. In a large wok over medium heat, heat oil. Add onion, and cook until translucent. Add mushrooms, then Spam, cooking until each is heated through.
  2. Add kimchi, kimchi liquid, gochujang, bouillon cube, and water. Stir to mix and dissolve bouillon cube into the mixture. Add rice, and toss to coat.
  3. Add green peas, and toss to mix. Once peas are heated through, stir in nori, season with salt and pepper, to taste, and serve immediately.

Roasted Caesar Salad

Ingredients:

  • 4 strips CDO Young Pork smoked bacon
  • 2 heads romaine lettuce, washed, dried, and cut in half lengthwise
  • 2 tbsps olive oil
  • 2 cloves garlic, minced
  • 1 cup croutons
  • 1/4 cup grated parmesan cheese
  • Choice of Caesar salad dressing

How to make Roasted Caesar Salad:

  1. Make the creamy Caesar dressing: Whisk together garlic, lemon juice, mustard, and mayonnaise in a bowl. Pour in olive oil in a slow, steady stream while whisking. Season with sugar, salt, and pepper. Whisk until smooth and creamy. Set aside.
  2. Preheat a toaster oven. Line baking sheet with foil.
  3. Arrange bacon on baking sheet in 1 layer. Cook in the toaster oven until crisp, about 10 minutes. Remove excess oil and foil from the baking sheet. Chop bacon into smaller pieces. Set aside.
  4. Place lettuce, cut side up, on baking sheet. Drizzle with olive oil and rub with garlic all over. Season with salt and pepper. Roast until slightly charred, about 5 minutes. Do this in batches, if necessary.
  5. Arrange lettuce on a serving bowl. Drizzle with dressing. Sprinkle bacon, croutons, and Parmesan cheese on top. Serve immediately.

Katsu Curry Rice

Ingredients:

  • 1 whole CDO Premium Tonkatsu
  • 300g cooked japanese rice
  • 2-3 cubes japanese curry
  • 1 large onion
  • 1 large potato
  • 1 carrot
  • vegetable oil for deep-frying
  • fukujinzuke pickled radish

How to make Katsu Curry Rice:

  1. Peel and cut onion, potato and carrot into small chunks.
  2. Add chopped vegetables to a large pan and fill the pan approximately half-way with water.
  3. Bring the water to boil and then simmer for 20 minutes or until vegetables are softened.
  4. Prepare rice while vegetables are cooking.
  5. Prepare pork by removing all the fat and seasoning with salt and pepper.
  6. Coat pork with plain flour, cover with raw, beaten egg and then dip in breadcrumbs before deep-frying in vegetable oil.
  7. Add 2-3 blocks of curry roux to vegetables and simmer for a further 10 minutes. Stir until curry sauce is thick and smooth.
  8. Slice cooked pork katsu into strips and lay over a bed of rice, then add the curry sauce. Garnish with pickled radish and enjoy.
