Easy Corned Beef Meal Ideas by Chefmom Rosebud
One of the easiest and most accessible breakfast food items has got to be corned beef. For most, people would often just fry the corned beef right out of the can and serve it with rice and eggs. Here are some easy-to-make corned beef meal ideas that you and your family are sure to enjoy – whether for breakfast, snack or any meal!
Corned Beef Breakfast Frittatas
Frittata is a dish that uses a lot of egg, similar to an omelette or crustless quiche which is almost like a pie as some would describe it. It’s an easy dish to prepare and is sure to be a new hit for your home.
What you need to prepare:
- 2 cans CDO Home-Style Corned Beef, pre-cooked
- 8 eggs
- 2 bread Slices
- 4 slices of cheddar cheese
- 4 tablespoons milk
- salt and pepper to taste
- 2 tablespoons canola oil, divided
- Parsley, garnish
Procedure:
Step 1
Pre-heat oven to 350F.
Step 2
In a mixing bowl, crack open all of your eggs. The number of eggs is dependent on the size of your pan but eight eggs should be fine for a 10-inch pan. Season with salt and pepper. Beat well. Set aside.
Step 3
On medium-high heat put the bread in the pan and crisp on both sides. Set aside afterward.
Step 4
Add one tablespoon of cooking oil in the pan with medium-high heat then add in the CDO Home-Style Corned Beef. Saute.
Step 5
Add the bread back into the mix and add in the milk. After the milk is absorbed, add in the second tablespoon of oil.
Step 6
Pour in the beaten eggs and the pieces of sliced cheese. Make sure to spread the beaten eggs evenly in the pan. Cook for two minutes on the stovetop.
Step 7
Place in the oven until the eggs are set. If you don’t have an oven, you may choose to keep cooking the frittata in the pan by covering the pan then wait until the top layer of egg also sets.

Corned Beef and Grilled Cheese Sandwich
Another great way to enjoy corned beef is with a grilled cheese sandwich. It’s perfect for snacks and for in-between meals or even for those looking for a light breakfast.
What you will need:
- 2 cans CDO Home-Style Corned Beef, pre-cooked
- 6 slices of white bread
- butter, softened, for brushing
- 2 cups cheddar cheese, grated
- 2 cups easy melting cheese, grated
Procedure:
Step 1
Brush one side of the white bread slices with softened butter until all 6 slices have been brushed with butter. Place the bread down with the butter-side down on a clean surface.
Step 2
Top 3 of the bread slices, buttered side down, with corned beef, cheddar cheese, and easy melting cheese. Cover each slice with another bread slice, buttered side up this time. Make sure that the butter side is on the outside of the sandwich with the corned beef and cheeses on the inside.
Step 3
Heat a large frying pan or a large grill pan until almost smoking. Grill sandwiches until browned, about 1 to 1½ minutes on one side, pressing down sandwiches slightly with a turner until they turn brown. Flip each sandwich on the other side and repeat the same process until brown.
Step 4
Once done, drain on paper towels. Slice in half and serve.

Baked Macaroni and Cheese
You can now easily make baked macaroni and cheese with corned beef! Chefmom Rosebud shows how to do this using CDO Corned Beef Cheesy and Creamy Pasta Sauce.
What you will need:
- 3 cans CDO Corned Beef Cheesy and Creamy Pasta Sauce, cooked
- 6 pcs crackers
- 250 grams macaroni, cooked as per package instructions
- 3 tablespoons butter, separated
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 2 tablespoons mustard
- 2 cups grated cheddar, separated
- Pasley garnish
Procedure:
Step 1
Preheat oven to 350 degrees F.
Step 2
Place crackers in a food processor, pulse. You may also consider using a mortar and pestle. If you don’t have crackers, you can use bread crumbs.
Step 3
Heat a sauce pot over medium heat. Add 2 tablespoons butter to pot and melt, whisk in the flour for 1 minute, then add milk in low heat. Season with salt and pepper, thicken sauce 5 to 6 minutes then stir in mustard. Remove the pot from the heat and add the1 cup cheese, stirring until smooth and combined.
Step 4
Add the cooked macaroni to the pot (Follow packing instructions for cooking the macaroni). Add in the cooked CDO Corned Beef Cheesy and Creamy Pasta Sauce. Toss to combine.
Step 5
Transfer the macaroni and cheese to a baking dish and top with bread crumbs and the remaining 1 cup cheese.
Step 6
Bake for 25 minutes. Serve.
With this recipe, you no longer have to prepare a pasta sauce as you can simply use CDO Corned Beef Creamy and Cheesy Pasta Sauce and your dish will be ready to cook once you add it in. It’s hassle-free and cuts your cooking time significantly.

Corned Beef Pasta
If you are looking for a simpler pasta recipe then you can go with the Corned Beef Pasta. While simple to make, it’s still full of flavor and will add variety to your everyday meals.
What you will need:
- 1 pack 250 gms Spaghetti, cooked (reserve 1 cup pasta broth)
- 4 Tbsp canola oil
- 1 large white onion, chopped
- 10 cloves garlic, crushed
- 2 cans CDO Corned Beef in Sweet Style Pasta Sauce (about 500 g), cooked
- 1 can (250 g) Pieces and Stems Mushrooms, drained
- 2-3 Tbsp Soy Sauce
- Salt and Pepper to taste
- 1 cup grated easy to melt cheese
- Pasley for garnish.
Procedure:
Step 1
Heat canola oil in a pan on medium-high heat. Saute onion and garlic for 2 minutes or until golden brown. Add the mushrooms, then the CDO Corned Beef in Sweet Style Pasta Sauce. Saute for 5 minutes.
Step 2
Add pasta broth, soy sauce. Stir. Season with salt and pepper. Cover and simmer over low heat for 10 minutes, stirring occasionally.
Step 3
Add half of the grated cheese. Simmer until cheese is just melted.
Step 4
Pour over pasta. Top with remaining cheese. Garnish with parsley. Serve.
